You are either going to love me or hate me for sharing this recipe for Oven Baked Corn Fries. Not only do they have the best snack food name since the Funyun, they are also baked — which means they’re not fried! If you have given up on “oven baked” french fries because you think they are soggy, these Oven Baked Corn Fries are going to blow your mind. I’m serious.
The corn meal baked onto each fry creates a crust and gives a crunch unparalleled by traditional oven baked french fries. They don’t taste corny. They are crunchy, potatoey and similar to a fry you’d find at a bar with a large selection of beer on tap. This is a basic recipe but the seasonings are only limited by your spice rack and imagination. Chipotle Corn Fries, Parmesan Garlic Corn Fries, Cajun Corn Fries… all equally fun to say, and guaranteed to be the best oven baked french fry you’ve ever had!
Ingredients for Corn Fries:
Russet or similar potato(es)
olive oil
corn meal
salt & pepper
NOTES: One potato makes a generous serving of Oven Baked Corn Fries. Use about a tablespoon of olive oil and a tablespoon of corn meal per potato; these measurements will vary based on the size of your potatoes.
DIRECTIONS:
Preheat oven to 425(F). Peel and wash potatoes. Cut potatoes into french fry sized sticks.
Toss potato sticks with olive oil, salt, pepper and cornmeal.
Spread seasoned potato sticks on a baking sheet in a single layer. For best results, potato sticks should not touch.
Bake in a preheated 425(F) oven for 15 minutes. Using a spatula, turn Corn Fries over and continue baking for another 5-10 minutes, until golden and crispy.

I love all fries, potatoes, wedges, etc etc so you’ve got my attention. Not long ago I tried a recipe for garlic fries that had a similar process but they were also microwaved in a bowl covered w/plastic wrap for a bit before baking – that gave them a super soft inside and the coating gave them the nice crunch while baking. Amazing! :)

Wow. It is hard for me to picture sweet potatoes as expensive. The coastal counties just across the state line in Mississippi provide one of the nation’s largest crops of sweet potatoes so they are always cheap and local here.
OK, now I’m starving! And it’s way past eating time! Those little bits of browned cornmeal — yum!
